This was a weekend standard for breakfast growing up. Hard to believe, but I was well into my teens before I knew that eggy toast was really just French Toast with a funny name.
The whole point of this dish is that you can make it anytime, with almost anything that you have hanging out in the dark recesses of your fridge or from what needs to be harvested from the garden.
A favorite weekday breakfast for dinner for me includes this omelet, a crisp green salad with a homemade Dijon/lemon vinaigrette and a slice of toasted garlic baguette.
