Crunchy Summer in a Bowl Salad

Ingredients

-2 tablespoons extra-virgin olive oil

-2 tablespoons fresh lemon juice

-1 garlic clove, grated or crushed

-1 teaspoon kosher salt

-3 cups canned chickpeas, drained and rinsed

-2 cups mixed yellow and red grape tomatoes, halved

-½ English cucumber, diced

-½ cup julienned carrots

-½ cup thinly sliced red onion

-¼ cup chopped fresh dill

-¼ cup chopped fresh mint, plus whole mint or dill for garnish

-Freshly ground black pepper

 Method

  • Mix all of the ingredients in a bowl and toss until coated with dressing. Adjust dressing and salt and pepper as needed.
