Garlic and Rosemary Roasted Nuts
A perfectly crunchy, herbaceous accompaniment to your next nosh display or cocktail hour. Small bags or tins of these nuts also make great gifts.
Ingredients
-4 cups mixed raw nuts such as walnuts, cashew and pepitas
-Leaves stripped from three large stems of fresh rosemary
-2 large garlic cloves, peeled
-Kosher salt to taste
-1 tbl red pepper flakes
-4 tbl extra virgin olive oil
Optional: 1/4 cup dried cranberries
Method
Mix the nuts evenly in a single layer in a shallow baking dish
Combine the rosemary leaves, garlic and red pepper flakes and pulse in a food processor until finely minced. Alternatively, add the salt and finely chop by hand
Coat the nuts with the rosemary/garlic mixture, olive oil and salt to taste
Bake in a preheated 350 degree oven for about 15 minutes. Be sure to watch closely as they will burn quickly if left in too long
Cool completely and if you like, add a little sweet chewyness by adding some dried cranberries
