Pickled Radish
Ingredients
-2 bunches radishes
-1 cup water
-1 cup white vinegar
-2 teaspoons sea salt
-2 teaspoons sugar
-1 teaspoon black peppercorn
-1 teaspoon yellow mustard seed
-1 sprig French tarragon
Optional 1: big pinch red pepper flakes or q chili pepper, split lengthwise
Optional 2: 2 cloves garlic peeled
Method.
Scrub the rashes until clean.
Thinly slice the radishes and divide between your jars.
Heat the vinegar, water, sugar, and salt in a medium saucepan over medium heat. Stir until the sugar and salt dissolve, about 1 minute.
Pour the brine over the radishes, then divide the peppercorns and mustard seeds among the jars along with a sprig of fresh tarragon.
Cool completely then place the lid and refrigerate overnight.
