Summer Tomato Chutney

your new favorite condiment

You will love this everything from eggs to curries!

Ingredients

-About 4 pounds of very ripe tomatoes

-1 cup chopped onions

-1/4 cup minced garlic

-1/2 cup golden raisins

-3/4 cup brown sugar

-3/4 cup white sugar

-1½ cups apple cider vinegar

-1 tablespoon sea salt

-1 lime zested and juiced

-1 tablespoon minced fresh ginger

-2 tablespoons minced pineapple mint

-1 tsp hot pepper flakes or more to taste

-1/2 teaspoon ground cumin

-Black pepper

Method

  • Coarsely chop the tomatoes and add them to a heavy stock pot.

  • Add the remaining ingredients  except for the mint and bring to a boil.

  • Lower the heat and cook at a very low simmer, uncovered  so that the liquid can reduce, anywhere from 2-3 hours depending on the juiciness of the tomatoes.  Make sure to stir every now and then so it doesn’t burn.

  • Once it’s reached the desired level of thickness, add the finely chopped pineapple mint.
