Summer Tomato Chutney
your new favorite condiment
You will love this everything from eggs to curries!
Ingredients
-About 4 pounds of very ripe tomatoes
-1 cup chopped onions
-1/4 cup minced garlic
-1/2 cup golden raisins
-3/4 cup brown sugar
-3/4 cup white sugar
-1½ cups apple cider vinegar
-1 tablespoon sea salt
-1 lime zested and juiced
-1 tablespoon minced fresh ginger
-2 tablespoons minced pineapple mint
-1 tsp hot pepper flakes or more to taste
-1/2 teaspoon ground cumin
-Black pepper
Method
Coarsely chop the tomatoes and add them to a heavy stock pot.
Add the remaining ingredients except for the mint and bring to a boil.
Lower the heat and cook at a very low simmer, uncovered so that the liquid can reduce, anywhere from 2-3 hours depending on the juiciness of the tomatoes. Make sure to stir every now and then so it doesn’t burn.
Once it’s reached the desired level of thickness, add the finely chopped pineapple mint.
