Farmer’s Market Roasted Veggie Tomato Sauce

Not only is this sauce remarkably simple to make, but roasting the vegetables until beautifully caramelized transforms them into a sauce with layers of smoky, sweet, and savory flavor in every bite.

Ingredients

-about 2 lbs ripe garden tomatoes, quartered

-1 large zucchini

-1 med sweet onion, quartered

-2 heads garlic

-2 small turnips peeled and quartered

-3 carrots, peeled and large chopped

-1 sprig fresh rosemary

-2 sprigs fresh thyme

-1/4 cup extra virgin olive oil

-1 tablespoon balsamic vinegar

-kosher salt and fresh black pepper to taste

Method

  • Heat oven to 375 degrees.

  • Peel the papery outer layers of the whole garlic bulb, keeping the head whole and leaving the skins of the individual cloves of garlic.

  • Using a sharp knife, cut 1/4 to a 1/2 inch from the top of cloves, exposing the individual cloves of garlic.

  •  Spread garlic, vegetables and herbs on a large sheet pan.

  • Toss with olive oil, balsamic vinegar, salt and pepper until evenly coated

  • Roast in the oven for 50 - 60 minutes, stirring once or twice until caramelized and roasted on the edges.

  • Remove the fresh herb stems and transfer the veggie to a large bowl.  Using an immersion blender, blend until mostly smooth.
