Farmer’s Market Roasted Veggie Tomato Sauce
Not only is this sauce remarkably simple to make, but roasting the vegetables until beautifully caramelized transforms them into a sauce with layers of smoky, sweet, and savory flavor in every bite.
Ingredients
-about 2 lbs ripe garden tomatoes, quartered
-1 large zucchini
-1 med sweet onion, quartered
-2 heads garlic
-2 small turnips peeled and quartered
-3 carrots, peeled and large chopped
-1 sprig fresh rosemary
-2 sprigs fresh thyme
-1/4 cup extra virgin olive oil
-1 tablespoon balsamic vinegar
-kosher salt and fresh black pepper to taste
Method
Heat oven to 375 degrees.
Peel the papery outer layers of the whole garlic bulb, keeping the head whole and leaving the skins of the individual cloves of garlic.
Using a sharp knife, cut 1/4 to a 1/2 inch from the top of cloves, exposing the individual cloves of garlic.
Spread garlic, vegetables and herbs on a large sheet pan.
Toss with olive oil, balsamic vinegar, salt and pepper until evenly coated
Roast in the oven for 50 - 60 minutes, stirring once or twice until caramelized and roasted on the edges.
Remove the fresh herb stems and transfer the veggie to a large bowl. Using an immersion blender, blend until mostly smooth.
